History
French Acadians (from what is now eastern Canada) migrated to southern Louisiana in the mid-18th century. Due to changes in climate from Acadia to southern Louisiana, they faced challenges growing the
ingredients used in their traditional dishes. They adapted by combining their French culinary roots with locally available ingredients, leading to the creation of
unique spice mixes. Over time, other influences such as Native American, African American, Creole, and Spanish contributed to the development of what is now known as Cajun spice.
