History
History
Jerk spice originated in Jamaica, developed by the
Maroons—formerly enslaved Africans who escaped in the 17th century and established free communities in Jamaica’s mountains. The Maroons combined African cooking techniques with methods from the indigenous Taino people, such as slow-cooking meat over a fire.
They used local ingredients like Scotch bonnet peppers, allspice (pimento), and thyme. The meat was traditionally cooked over pimento wood, which imparted a distinct smoky flavour.
Jerk became a symbol of the Maroons' resilience and
resistance. Today, it is celebrated globally as a vibrant expression of Jamaican culture.
